How to make it
In a few words: Mix cooked, cooled spinach with ricotta, fill puff pastry and bake.
Ingredients
- 1 rectangular chilled puff pastry, about 275 g, without animal lard
- 250 g frozen leaf spinach
- 150 g ricotta labelled vegetarian
- 1 small pinch of nutmeg
- 1 small pinch of salt
- 2 tbsp milk for brushing
Method
- Children: Set out ingredients. Adults preheat the oven to 200 °C conventional heat; check the pastry packet.
- Adults: Heat spinach thoroughly with 2 tbsp water following its packet, about 10 minutes. Let cool and squeeze out excess water.
- Children: Mix cooled spinach with ricotta, nutmeg and a small pinch of salt.
- Adults: Cut pastry into 8 rectangles on a cold tray lined with baking paper.
- Divide the filling between the 8 pastry pieces, about 2 tbsp each. Leave at least a 1 cm border. Fold over and press the edges together with a fork. If any filling remains, heat it separately and serve alongside.
- Children: Brush lightly with milk. Adults bake for about 20–25 minutes until golden and fully cooked.
- Adults: Remove tray and let parcels cool. Do not taste raw pastry; filling stays hot longer than pastry.
Equipment
Kitchen scales, a bowl and the cooking equipment named in the steps. Adults handle all hot or sharp equipment.
Allergens and shopping
Wheat (gluten), milk; check pastry label. Always check the actual ingredient labels and family allergies.
Buy any cheese explicitly labelled vegetarian and without animal rennet; choose pastry without animal lard.
