Puschel’s Semolina Pudding with Berry Compote

Slowly whisk semolina into hot milk, cook briefly and let swell. Thoroughly boil frozen berries for the compote.

The little story

The Red River in the Semolina Sea

Puschel and Flauschi stood at the table before two bowls of semolina pudding. It had cooled to a comfortable temperature. Cooked berry compote waited beside it.

Puschel„I am painting a red river.“

He drew a little curve through his own bowl with a spoon. It turned crooked and ended in a thick red island. Puschel raised his eyebrows in surprise.

Flauschi„Your river went on holiday along the way.“
Puschel„It found an island. It had to stop there.“

Flauschi added just one fruit dot to hers and enjoyed looking at Puschel’s curve.

Flauschi„My island does not need a river today.“
Puschel„Then we can visit both islands one after another.“

They gently stirred their portions again, checking beneath the surface for heat, then tasted.

Puschel„The river is a little tart. The semolina sea is soft.“
Flauschi„Together they taste like a cosy afternoon.“

Puschel left his river crooked. It did not need to be straight to taste good.

How to make it

In a few words: Slowly whisk semolina into hot milk, cook briefly and let swell. Thoroughly boil frozen berries for the compote.

Ingredients

  • 1 litre milk
  • 100 g fine soft-wheat semolina
  • 20 g sugar
  • 8 g vanilla sugar
  • A small pinch of salt
  • Compote: 300 g frozen berries, 50 ml water and optionally 1 tsp sugar

Method

  1. Wash hands. Weigh ingredients and get equipment ready. Adults handle knives, graters, tin openers, mixers, the hob, oven and all hot containers.
  2. An adult puts frozen berries and 50 ml water in a small saucepan. Bring to a boil while stirring and boil vigorously for at least 2 minutes; follow any longer packet directions. Then simmer gently for 3–5 more minutes until soft. Do not merely thaw or warm them. Add 1 tsp sugar if needed.
  3. In another sufficiently large saucepan, bring milk, 20 g sugar, vanilla sugar and salt to a boil while stirring. Avoid boiling over.
  4. Turn heat low. Sprinkle semolina in slowly like a thin rain while whisking continuously to reduce lumps.
  5. Cook over very low heat for 3–5 minutes, stirring frequently and following the semolina packet as well. Switch off and let swell for 5 minutes. The pudding thickens; if too firm, stir in a little extra milk by the tablespoon and briefly reheat.
  6. Divide among four bowls. Add compote on the side or top. Cool well before eating and stir with a clean spoon: food below the surface can remain very hot.
